Our Story

The owners, Brenda and Christina had an idea way back in 2016.

The Blue Spoon.

As Brenda and Christina sat at their desk jobs thinking of ways to earn extra income on the weekends, they considered their love for food trucks. The two would always joke around and say, “Let’s quit our jobs and buy a food truck.” Well, one day that became reality when they were tagged in a facebook post that said “food truck for sale,” and that’s when Brenda and Christina decided to “Go for it!”

The first food truck event was in 2017 at the local Crawford County Fair, a four-day event. The fair proved lucrative for the two and they decided to keep going. After attending several events and quickly outgrowing the food truck, we upgraded to a bigger food truck in 2020. Soon, after we bought the new food truck the pandemic hit. During this time we saw an opportunity; to be able to serve during this time. While the world was grey, the Blue Spoon food truck traveled to various locations, providing good mood food to the people. To say the least the Blue Spoon food truck was slammed at every pop up while everyone kept their distance.

Brenda and Christina were then focused on how to grow their business. They wanted to start custom catering to fulfill the gap in Pittsburg. After searching for a commercial building they decided to remodel Oberle’s rental house to fit their needs, for a kitchen and space. By April 2021, the space had been approved for their new venture The Blue Spoon Kitchen, customized catering, pick-up and delivery lunches. Brenda and Christina realized that, “People want different things, and we can give them that because we don’t set our menu to something specific.”

As the Blue Spoon continued to grow, in 2022 Brenda and Christina were still looking for a commercial building to fulfill their dreams and they found it - 618 N. Broadway, Pittsburg, KS. The Blue Spoon now operates at full potential with plenty of space, while staying in the heart of Pittsburg!

The Blue Spoon has three parts of business; the Food Truck, Storefront and Customized Catering. The food truck will continue to be in various locations for specific events. The storefront has Grab N’ Go lunches, snacks and desserts available for purchase. The storefront also provides an easier, more accessible place for customers to pick up orders.

The Pittsburg Area Chamber of Commerce honors women in business.

In 2023 Brenda Davis, the owner of The Blue Spoon was honored to be selected as “A woman of distinction.”

Cooking and being involved in the food industry is in my blood. Growing up my grandparents managed different restaurants and I remember being in the back rolling silverware into napkins at the age of five. I remember my grandma always used to say, “We never made it in the restaurant business because grandma always wanted to give everything away.” My grandma and mother always made everything from scratch, from spaghetti sauce to pasta noodles and everything in-between. As I grew older, I always gravitated toward books about food or dishes and always had the Food Network channel on. When Christina and I decided to purchase the food truck and possibly quit our jobs, I had to start making recipes for the menu items. I wanted to make everything from scratch. As time went on, the food truck was booked up every weekend and that’s when we decided to quit our jobs. It was scary but our dreams were bigger. Now, we have the Blue Spoon storefront, food truck and customized catering. I love to get creative while making food and always want to try new things. The hardest part about being a chef at heart, is teaching the employees how to make different recipes because I don’t measure anything when I cook.
